Simply Scrumptious Butter Crabs

If there is one recipe that is truly Malaysian, this has to be it.  Malaysia is truly a food paradise and the vast array of food left me gasping for breath when we first arrived two decades ago.   We all enjoyed trying out various cuisines and soon had our favourites.  This recipe was given to me by a  friend after we ooohed and aaahed over it after dinner one day.    Best eaten at home with your fingers as you will want to lick up every single drop of the delicious sauce.
3 large crabs, cleaned, cut, washed and drained;  1 can evaporated milk; 3 tbsp. butter; 3 sprigs curry leaves;  ½ tbsp. minced green chillies (optional); 1/4 tsp brown sugar.

3 slices bread:   Heat oil in a medium sized wok and when very hot deep fry the bread till brown and crisp on both sides. .  Takes less than a minute.  Drain and keep aside.

Heat the butter in a large wok.  Lower heat to medium and saute the curry leaves for a minute or two until crisp.  Add the crabs, chillies, sugar and evaporated milk and cover and cook until the crabs change colour.  This takes about 5 minutes.  Serve with deep fried bread.  Simply Scrumptious and don't worry about making a mess at the table.  This is one dish you will thoroughly enjoy.

Marbled Coconut Panna Cotta

And so the celebration continues ...and today it was a sinful dessert- a fusion of east and west .  A delightful combination of thick coconut milk mixed with cream and sugar and a few black cherries thrown it.  This is a very light, creamy concoction that could go straight to your heart (and waist line).  What the heck, we are on the Herbalife shake and can afford to do this once in a while.

The Recipe:

1 cup thick coconut milk; 1 cup cream; 1/4 cup caster sugar or to taste; 2 tbsp gelatine ; 1/4 cup hot water; few black cherries or any fruit of your choice; few drops pink food colouring.

Sprinkle the getatine on the hot water and keep aside to dissolve.  Heat the coconut milk on a medium flame until bubbles begin to form at the sides.  Remove from the stove.  Gently fold in the cream and sugar and stir until the sugar is dissolved.  Once the getatine has dissolved completely stir it into the coconut milk and cream mixture.  Divide the mixture into two.  Pour one half into a glass bowl and pop it into the freezer for 15 minutes or until partially set.  Add the pink food colouring to the second half.  Next pour the pink mixture onto the partially set Pannacotta and using a wooden toothpick give it a swirl or two to create a marbled appearance.  Transfer to the refrigerator and when partially set, decorate with cherries or fruits of your choice.  Creamy, rich and absolutely wonderful.

Exotic Christmas Liqueur

I never thought that that making liqueurs at home would be so much of fun.  It's the perfect gift for Christmas and other occasions and the best part is the surprise on the recipient's face and then their delight on tasting it.  I've made coffee, cocoa, pineapple, orange, apricot, ginger, strawberry and other liqueurs over the years.  This year I'm venturing where angels fear to tread.  We tasted some Exotic Hazelnut Liqueur at a friend's house which utterly delighted me.  All you have to do is buy the ingredients and follow the four basic steps involved- infuse, filter, sweeten and mellow.  The longer you age it, the better it is.  And let me tell you, this is one fantastic gift. 

 The Recipe:

2 cups hazelnuts; 1 1/2 cups vodka; 1/4 cup caster sugar; 1/4 cup water; 1 vanilla bean or 2tsp vanilla essence.  Use a good quality one.

Place the hazelnuts and vodka in a glass jar and infuse  for two to  four weeks.  The longer the better.  Store in a cool, dark place.  

After infusing, mix water and sugar and heat  till the sugar is dissolved.  Cool and add to the hazelnut mixture.  Steep for another three days.  Split the vanilla bean in half and add to the mixture and rest for five days.  Taste often and when the desired flavour is achieved strain, bottle and enjoy.  Use the hazelnuts for cakes and toppings and ice cream and anything you fancy.  Start the Christmas Season with a little bit of gusto and fun.
